Classic eggs Benedict has its merits, but when you have extra time and want to take things to the next level, you should try this version. You layer an English muffin with Manchego cheese, prosciutto, tomato, sage leaves, and a poached egg. Then, perhaps the most intriguing part, you drizzle on the sage hollandaise sauce. I love the multiple uses of sage in this dish — such a nice twist!
