When it comes to pumpkin spice flavor, I admit I was late to the party. I never understood the hype. This year, however, I made a concerted effort to give it a fair try and much to my surprise, I loved it. From the classic pumpkin spice latte to pumpkin spice pancakes at IHOP, it’s safe to say I went total pumpkin spice fanatic.

With so many pumpkin-flavored creations up for grabs, I didn’t think any dessert combination could stop me in my tracks. But that was precisely what happened when I came across a recipe for a delicious Oreo Carrot Cake with Pumpkin Spice Cream Cheese Frosting.

Anyone that knows me knows that my love for Oreos is no secret, but finding a cake that combined the flavors of Oreos, carrot cake, and pumpkin spice just felt too good to be true. Luckily for us all, it’s not a figment of our imaginations and the best part is the recipe only requires two ingredients. That’s right, with two simple ingredients, you and your family can enjoy a moist, fall-flavored cake that’s sure to make the holidays even more memorable.

To start your confectionary journey, simply add 24 carrot cake-flavored Oreos to a food processor and blend until they are crushed. Next, add your milk directly into the food processor and the Oreos. Blend the two until a smooth batter begins to form. Using a microwave-safe cake pan, heat the batter in the microwave for five minutes. Once it’s done, remove it from the pan and allow the cake to cool.

While the cake is cooling, begin to work on the optional pumpkin spice-flavored cream cheese frosting. In a food processor, mix room temperature butter and cream cheese with powdered sugar, vanilla, and pumpkin spice. Once the ingredients are well blended, pour the sweet creation into the middle of the cake just until it begins to overflow onto the top part of it. After snapping a picture or two of it for social media, your only job is to slice it up and enjoy it. Yum!
