The Beauty of No-Bake Fruit Tarts
To me, August is all about tomatoes and stone fruit. While I don’t usually can very often, I make an exception for peach jam and love incorporating delicate apricots, sweet nectarines, and juicy peaches into morning breakfasts and evening desserts. And what better way to showcase a nice batch of peaches than a no-bake summer fruit tart?
There are a number of no-bake dessert recipes out there to get excited about — from puddings and mousses to ice box cakes and ice cream—but this recipe pictured above stuck out for a few reasons.
First, the crust is a crumbly delightful no-flour recipe relying on pecans, almond meal and coconut oil. As Sara Forte points out, you could swap in different nuts based on what you have at home or to celebrate the fruit at hand. Pistachios would be lovely with cherries; walnuts would be nice with apples or pears.
Also: this is a no-roll crust, so not only are we not turning on our ovens but we’re not rolling out pie dough. All good things.
Last, the cream layer is as simple as a bit of sweetened creme fraiche = (there is also a vegan coconut milk cream option) and then the peaches are thinly-sliced and layered on top. Sara says it’s “summer in all its glory.” I’d have to agree.
