Sadly, the last few weeks of summer are here. For many, that means the end of impromptu evening trips to your favorite local ice cream shop. But if you’re an avid ice cream fanatic like me, your freezer is always stocked with your favorite pint (or pints, if we’re being completely honest). True ice cream fans won’t let some cold weather stop us from indulging (hello, pumpkin ice cream!). Which brings me to my brand-new fave. Yes, it came out late in the season. Also yes, I’ll be buying it well into the fall and winter!

During a recent grocery run, I made my usual pit stop in the frozen dessert section. Turkey Hill’s new Vanilla Bean & Double Chocolate Chip Ice Cream Cookie Sandwiches immediately caught my eye. When it comes to ice cream sandwiches, it’s hard to beat the classic vanilla-ice-cream-and-soft-cookie combo. I’ve tried other brands, but have never been too impressed by the texture of the cookies. They don’t always hold up well frozen (they get way too hard and way too crumbly), but Turkey Hill’s definitely do. The soft cookies basically taste like Chips Ahoy! Chewy Chocolate Chip Cookies (a classic!).

The subtle sweetness of the vanilla bean ice cream balances out the richness of the soft chocolate chip cookies, practically melting in your mouth when you bite into it. The cookies are studded with just the right amount of mini chocolate chips, giving every bite a satisfying crunch. Bonus points to whoever at Turkey Hill decided that the cookie should be a double chocolate chip cookie instead of just a regular chocolate chip cookie! It’s sweet, but not too intense.

Honestly, these are the perfect fall treat. I can already see myself eating one while sitting around a fire pit (and wearing my coziest sweater).
