Here's another great idea for those of us who have to eat breakfast on the go. Flickr member S0mebody 3lse had the great idea to make pancakes in bar form and we're anxious to give it a try...
From the image description, it sounds like this person poured regular pancake batter into a casserole dish, sprinkled berries and brown sugar on top, and baked it in the oven at 400°.
The finished texture isn't mentioned, but the images make the bars look dense, firm, and less floppy than normal off-the-griddle pancakes. If so, this sounds perfect for wrapping in napkin and eating on our way to the bus stop.
If that's not the case, changing the liquid-to-dry ratio might result in a more portable pancake while maintaining the pancake-like flavor. Adding more flour, oats, or even ground nuts would make the batter more stiff, which would (theoretically) bake into a denser pancake bar.
