I always try to fill my weekly meal plans with nourishing dinners that are easy to prepare. Some nights that means cooking dinner on a single sheet pan, and other nights that means using as few ingredients as possible. These tender honey-balsamic steak bites do both: The ingredient list is short, and cleanup takes mere minutes. Make them just once, and they’ll quickly become a suppertime staple in your home, too.

New York Strip Is Best for Steak Bites

Most grocers sell pre-cubed portions of steak in the meat case (sometimes called steak tips), and while they’re relatively inexpensive and have big, beefy flavor, I prefer to start with New York strip steak. It’s boneless, which makes it easy to slice into bite-sized portions, and because it’s well-marbled, every bite is juicy and delicious.

Once the steaks are cut to size and seasoned all over with kosher salt, sear them in a hot skillet until every edge is browned. Then, toss the steak bites with a sweet and savory sauce of honey and balsamic vinegar. Finishing the steak with sliced scallions is optional, but you’ll love the mild onion flavor and fresh green color it adds.

  • 2 tablespoons

    honey

  • 2 tablespoons

    balsamic vinegar

  • 2

    medium scallions

  • 2 pounds

    (1 to 1 1/2-inch thick) New York strip steaks

  • 1/2 teaspoon

    kosher salt

  • 2 tablespoons

    olive oil

  1. Whisk 2 tablespoons honey and 2 tablespoons balsamic vinegar together in a small bowl. Thinly slice 2 medium scallions (about 1/4 cup). Cut 2 pounds New York strip steak into 1-inch cubes, then season them with 1/2 teaspoon kosher salt.

  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add the steak cubes and sear until browned, flipping them halfway through, 6 to 8 minutes total. Add the honey and balsamic vinegar mixture and cook for 1 minute more. Remove from the heat and garnish with the scallions.
