Store-bought gnocchi is one of my favorite grocery-store conveniences, so I usually throw a bag or two into my cart every time I’m at Trader Joe’s. But instead of boiling it, I roast my gnocchi for the easiest pasta night ever. That’s right — forget everything you know about cooking gnocchi (and disregard the instructions on the package, too). Instead, toss your gnocchi on a sheet pan and roast until it’s plump and just a bit caramelized.

For this recipe, all you need is Trader Joe’s frozen sweet potato gnocchi, sweet Italian chicken sausage, and pesto. Not only does roasting saves you the step of boiling water, but it also gives gnocchi some crispy edges. Toss with a couple other ingredients and you’ve got a fun twist on a dinner favorite.

A 3-Ingredient Sheet Pan Dinner in 15 Minutes

This dead-simple dinner is exactly what to make on harried weeknights. All you need to pick up at Trader Joe’s is a bag of frozen sweet potato gnocchi, a package of sweet Italian chicken sausage, and a container of pesto.

It’s also well-suited to be tinkered with depending on what your Trader Joe’s currently has in stock or simply what you’re in the mood for. You can make this with classic potato gnocchi instead of sweet potato, swap in your favorite flavor of fully-cooked chicken sausage, or reach for another variety of pesto. Even Trader Joe’s Artichoke Antipasto or one of their many kinds of olive tapenade would make a good sauce here, too. Really, this is just a template for your new favorite lazy meal.
