Quick & Easy Hummus Bowls, Thanks to 3 Ingredients
This simple recipe relies on just a few Trader Joe’s ingredients, only one of which actually needs to be cooked. Grab a package of their chicken thighs that have been marinated in shawarma-style seasoning (cumin, garlic, turmeric, and cinnamon) and roast them. Shred the meat, and then, while it’s still warm, pile into bowls of creamy hummus. Top off each bowl with some cauliflower tabbouleh for a dose of vegetables, and you’ve got a dinner that’s fast and feel-good. If you’d like, serve with pita to swipe up extra hummus.

(1 1/2-pound) package Trader Joe's Shawarma Chicken Thighs
- 1
(16-ounce) container Trader Joe's Original Hummus Dip
- 1
(12-ounce) container Trader Joe's Cauliflower Tabbouleh
Instructions
Arrange a rack in the middle of the oven and heat to 425°F.
Place chicken thighs in a baking dish. Roast until cooked through, about 20 minutes. Let cool slightly and shred.
Divide the hummus among 4 shallow bowls. Top each with shredded chicken and cauliflower tabbouleh.
