A compound butter flavored with garlic and herbs is the elegant answer for easy seasoning. Surround the pork with herby potatoes, green beans, and wild mushrooms during the final stretch in the oven to finish off this easy one-pan dinner.

A Sunday-Style Dinner Any Night of the Week

There’s no reason pork loin shouldn’t be on your grocery list every single week. This cut is easier to cook than pork tenderloin, its slender counterpart. Its larger, more uniform size means it cooks evenly and won’t overcook as quickly, leaving the meat juicy and tender. Slather the pork in a garlicky herb butter before roasting, which allows the meat to absorb the rich and flavorful drippings.

No Sunday-style dinner is complete without a medley of roasted vegetables. Trader Joe’s freezer section comes to the rescue again with trimmed and seasoned potatoes, haricots verts, and wild mushrooms that cook alongside the roast. Serve generous slices of pork with a melty pat of herb butter and a serving of seasoned veggies for a simple and satisfying supper.

  • Cooking spray

  • 1

    (1 1/2 to 2-pound) boneless pork loin

  • 3 tablespoons

    Trader Joe's Roasted Garlic and Herb Butter Spread, at room temperature

  • 1 (16-ounce) package

    Trader Joe's frozen Country Potatoes with Haricots Verts & Wild Mushrooms

  1. Arrange a rack in the middle of the oven and heat the oven to 400°F. Coat a rimmed baking sheet with cooking spray.

  2. Pat a (1 1/2 to 2-pound) boneless pork loin dry with paper towels, then rub with 3 tablespoons Roasted Garlic and Herb Butter Spread. Place in the center of a baking sheet. Roast for 20 minutes.

  3. Arrange the Country Potatoes with Haricots Verts & Wild Mushrooms around the pork loin. Roast until the potatoes are crispy and the pork loin registers 145ºF on an instant-read thermometer, 10 to 15 minutes more. Let the pork loin rest for 5 minutes before slicing and serving.
