If you’re anything like me, you’ve walked past the rows of salad kits at Trader Joe’s in amazement. Who knew there could be so much variety in one simple grocery store convenience? It seems like every time I stop and ogle at them, there’s a new kind squished in between the bags of baby spinach and Cruciferous Crunch.

While they make a nice and easy side dish on their own, these salad kits typically lack the protein needed to turn them from side dish into main dish. Here, I’ve added a few other Trader Joe’s ingredients to solve that problem in next to no time at all.

Why Trader Joe’s Falafel Mix Is My New Obsession

One of my current favorite Trader Joe’s items is their dry falafel mix. You just add water to the mix to assemble the falafel, which honestly makes you feel a little like a magician. Adding them to their Organic Mediterranean-Style Salad Kit is an easy way to add protein, and bulk it up even more with some whole-grain farro.

  1. Make a double batch of falafel according to box instructions.

  2. While the falafel dough rests before baking, bring a large pot of water to a boil and cook farro according to package instructions. Drain farro, spread onto a rimmed baking sheet, and transfer to fridge to cool.

  3. Form falafel dough into patties and bake on a parchment-lined baking sheet at 350°F until golden and puffed, 25 to 30 minutes.

  4. Assemble the salad kit, divide it among 4 shallow bowls, and top with farro and falafel.
