Breakfast seems to get all of the egg action, which frankly I think is a bit unfair. In fact, I actually prefer a frittata for dinner! They’re mostly hands-off and barely dirty any dishes, and leftovers are delicious both cold and re-warmed. And, as any frittata-lover will tell you, they’re the perfect way to pack in veggies.
Trader Joe’s Frozen Green Foursome
This recipe uses Trader Joe’s Green Foursome, which is a frozen mixture of broccoli, peas, zucchini, and green beans. They really couldn’t have made it any easier to get in a heaping of great greens. If you’ve got picky eaters on your hands, this may be the recipe to ease them in: Vegetables undoubtedly taste better when they’re surrounded by soft, fluffy eggs and crumbles of goat cheese.

Ingredients
- 1 (14- ounce) bag
frozen Trader Joe’s Organic Green Vegetable Foursome
- 12 large
eggs
- 1/2 cup
heavy cream
- 1 teaspoon
kosher salt
- 1/4 teaspoon
freshly ground black pepper
- 3 ounces
Trader Joe's Chevre (fresh goat cheese)
- 2 tablespoons
olive oil
Instructions
Arrange a rack in the middle of the oven and heat the oven to 350ºF.
Heat 2 tablespoons olive oil in a 12-inch cast iron or oven-safe nonstick skillet over medium heat until shimmering. Add 1 bag frozen Trader Joe’s Organic Green Vegetable Foursome and cook until warmed through, 5 to 6 minutes. Meanwhile, place 12 large eggs, 1/2 cup heavy cream, 1 teaspoon kosher salt, and 1/4 teaspoon black pepper in a large bowl and whisk to combine.
Spread the vegetables in the pan out into an even layer. Pour in the egg mixture, then crumble 3 ounces Trader Joe’s Chevre on top. Let cook undisturbed until the edges begin to set, 1 to 2 minutes. Transfer the skillet to the oven and bake until the eggs are fully set, 15 to 18 minutes. Let cool in the pan for 5 minutes before cutting into wedges and serving.
