Make this easy salad with thin shavings of Brussels sprouts and nutty lentils and finished with a creamy sesame dressing. Pack this for lunch and I guarantee you’ll resist the takeout menu temptation.
Lentils are Fast and Filling
Lentils are an essential ingredient in any pantry, but especially if you’re a last-minute cook. Even if you prepare them from scratch, these legumes require no presoak. But if you’ve got a Trader Joe’s nearby, don’t miss the lentils stocked in the produce section. These high-protein legumes are already cooked and ready to eat! Toss them in a skillet with sautéed shaved Brussels sprouts (another TJ’s time-saver!) until crispy and hot. A drizzle of nutty sesame dressing finishes the dish.

Trader Joe's shaved Brussels sprouts
- 2 cups
Trader Joe's refrigerated, steamed lentils
- 3 tablespoons
Trader Joe's Organic Toasted Sesame Dressing
Instructions
Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add the shaved Brussels sprouts and cook until tender and lightly browned, 4 to 5 minutes. Stir in 2 cups steamed lentils and cook until heated through, 1 to 2 minutes. Toss with 3 tablespoons sesame dressing.
