Top Your Toast with Roasted Pineapple & Whipped Ricotta

A slice of toast for breakfast is nothing new, but this recipe for toast with whipped ricotta and roasted pineapple sure is. The crunchy bread, the creamy ricotta, the sweet pineapple — this is how you start your day off on the right foot.

To make the caramelized pineapple, you’ll need either some pineapple rings or chopped pineapple. Place it on a parchment-lined baking sheet, drizzle it with honey, and roast at a high heat until it’s nice and golden. If you really want to get that perfect caramelization on top, you can turn on the broiler for the last bit of cooking.

While the pineapple is in the oven, you can make your whipped ricotta. All you have to do is blend the ricotta in a food processor until it’s smooth and creamy — it doesn’t get any easier than that!

Then all that’s left to do is assemble! Grab a loaf of your favorite bread, cut off a few slices, and toast it. Once you have your toast, spread on a generous layer of whipped ricotta, layer on the pineapple, and sprinkle some sea salt and fresh mint over top. Breakfast just got so much better.
