Make This Tomato Lentil Soup Again and Again

This tomato lentil soup from Flourist stopped me in my tracks this week. You see, I’ve recently been struggling with meal planning. I know, I know, I work at Kitchn! I’m surrounded by inspiring recipes every single day, so why would I struggle to figure out… dinner? Right now everything seems too heavy or too healthy or too boring or too complicated, but this tomato lentil soup might fix this problem.
The “comforting tomato broth and minced vegetables fondly remind us of canned tomato vegetable soup,” explains the recipe developer. This soup looks hearty, healthy, and super easy to make. But it’s not boring! The lentil soup includes diced and peeled potatoes, which I imagine give the soup a thicker texture than other lentil soups I’ve made. And in the photo above, the soup is topped with dill and diced avocado, which looks delicious.
To make the soup, you sauté onions, garlic, celery, and carrots in a large pot with a little salt. Then you add the canned tomatoes, diced potatoes (!), tomato juice, lentils, stock, and seasoning to the pot and let things get comfy for about an hour. The recipe calls for specific lentils from Flourist (specifically these laird lentils), but you can use green or yellow lentils as a substitute. When the soup is done, you can top it with whatever you want.
And that’s it! Seriously — you could totally go to the grocery store, pick a few ingredients up, and make this tonight. This would be delicious by itself, or with a half a sandwich for dinner (this grilled cheese looks especially delicious).
