We’ve officially reached the point of summer where every meal is punctuated with a ripe and juicy tomato. I’ve already made my way through plenty of BLTs and caprese salads, but one cannot live on those things alone (believe me, I’ve tried). That’s why I’m always on the lookout for easy summer tomato recipes.

On a recent Google search I found Southern Bite’s tomato cracker salad recipe, and it immediately piqued my interest. This three-ingredient dish reminded me of a tomato sandwich, but instead of bread you stir in crushed saltine crackers — and the dressing is only mayonnaise. Was it as simple and brilliant as it looked? Here’s what happened when I went into the kitchen to test it out.

How to Make Southern Bite’s Tomato Cracker Salad

Cut tomatoes in half, then scoop out and discard the seeds. Coarsely chop the tomatoes and transfer to a mixing bowl. Add mayonnaise and stir to coat. Crush saltine crackers and gently toss them into the tomato mixture. Season to taste with kosher salt and freshly ground black pepper, then serve immediately.

My Honest Review of Southern Bite’s Tomato Cracker Salad

This salad really surprised me: It’s delicious, easy, and perfect for summer. The tomatoes’ sweet juices turn the rich and creamy mayonnaise into a light vinaigrette. The simple seasoning of salt and pepper really brings out the flavor of the tomatoes and the tang of the mayonnaise.

Assemble the salad just before serving. Some edges of the saltine crackers soften in the dressing, while others retain their crunch. The crackers give the tomato salad texture that even the classic tomato sandwich doesn’t have without adding extra — and frankly unnecessary — flavors.

3 Tips for Making Southern Bite’s Tomato Cracker Salad

  1. Use good-quality mayonnaise. Duke’s is my mayonnaise of choice. If you can’t get your hands on the yellow-capped jar, use the best mayo you can find or make your own.
  2. Only the best tomatoes need apply. Pull tomatoes off of your patio plant, buy a few extras from the farmers market, or choose the best tomatoes from the produce section of your local grocery store.
  3. Make just before serving. Tomatoes have the best flavor at room temperature, so it’s best to seed and chop them just before serving so that there’s no need for refrigeration. Serve as soon as the mayo and saltines are mixed in, before the crackers absorb too much moisture.
