Tomato Basil Salmon Pasta Is the Deliciously Easy One-Pot Recipe You Need for This Week’s Dinner
As self-taught chef-turned-food influencer Lorenzo Espada says on a recent Instagram post, “salmon and pasta just go together.” In that spirit, Chef Renzo (known as @eatwitzo on social media) offers a new way to pair the two with his quick and easy Tomato Basil Salmon Pasta, which you’ll love even more if you’re a fan of one-pot pasta recipes.
Using smoked paprika, oregano, garlic, and onion as its base, this recipe yields a creamy sauce which can be combined with your favorite pasta. The seasoning blend is first combined with lemon pepper and a dash of salt, then mixed into 1 pound of salmon nuggets, using olive oil to coat thoroughly before cooking. Pan fry your salmon for approximately 5 to 6 minutes, then set it to the side.
In the same pan, melt 2 tablespoons of butter, to which you will add another tablespoon of freshly minced garlic and tomato paste. Once this mixture has combined, add in the designated amount of heavy cream and the base seasoning blend. The recipe calls for 1 1/2 teaspoons of each ingredient, but does not specify how much to use to season the fish and how much to use in your sauce, so you have some flexibility here.
Bring the sauce to a low boil, then add in 1/2 cup of Parmesan cheese, between six and 10 chopped basil leaves, and simmer for a few minutes before adding your pre-cooked noodles to the sauce. Lastly, return your salmon to the pan, stir together, and your dish is ready to serve!
