This Hack Will Make Meal Prepping with Tofu an Absolute Breeze
If there’s any plant-based protein that deserves its own day, it’s tofu. We bake it, fry it, blend it … whatever our choice, tofu can do it all and should be celebrated. That’s exactly what Catherine Perez, registered vegan dietitian and nutritionist at @plantbasedrd, did when she shared four marinades for quickly prepping the most incredible tofu on National Tofu Day (September 1).
While she uses Nasoya’s Super Firm Tofu (she praises its vacuum seal and high protein per serving), you could really use any brand. She also offered her more than 500,000 followers several swaps for ingredients to make marinades gluten-free, as well as answers to several FAQs on timing, to press or not to press, and recipes for the finished product.
So why soak tofu? While tofu is great just tossed plain into recipes, “when you marinate tofu for longer, more flavor will have the opportunity to really penetrate into the tofu and give your dish more flavor” she writes on her blog. The marinades also are super easy for flavorful nutrient-dense plant-based dishes, are perfect for meal prep, and use only a few ingredients that you probably have in your fridge and pantry (you can sub crushed red pepper flakes or cayenne pepper for the gochugaru). You can even save the marinade to create sauces to drizzle over your tofu dish.
