These Quick and Easy Gingerbread Truffles Use Just 3 Ingredients and Are Ready in Less Than 30 Minutes

In my opinion (and probably yours, too), the last three months of the year bring about the best holidays. Halloween, Thanksgiving, and Christmas all give me back to back pleasure with family time and some of the best dishes I could ever imagine. Seasonal flavors like pumpkin spice, peppermint, and sweet potato are also in abundance during those months, bringing a dessert connoisseur’s sweetest dreams right to life.

While all the flavors mentioned above are great, for me, it’s gingerbread-flavored items that truly take the crown. And with the release of her quick and easy 3-Ingredient Gingerbread Truffle recipe, it’s safe to say that author and foodie Eloise Head (@fitwafflekitchen) agrees. 

Start by selecting 10 of your favorite gingerbread cookies and place them in a ziptop bag. From there, crush the cookies thoroughly (a rolling pin works well) and pour the crumbled goodies into a bowl before adding your cream cheese. Once everything is mixed, roll a single tablespoon into a small ball and place onto a plate, repeating the process until all the mixture is used. When this process is completed, freeze the dough for 20 minutes. 

The next few steps may get sticky, but the flavor will make it worth it. Dip each ball in your favorite melted white chocolate until it’s fully coated, letting any excess white chocolate drip off before plating. At this point, you could enjoy your truffles and keep any extra refrigerated. If you want to make things a bit more festive, however, sprinkle white glitter on each truffle, then top it with a small sugar snowflake. After all, is there anything better than an edible winter wonderland?
