Made with ingredients you can pick up at Trader Joe’s, this easy breakfast hack is sure to impress everyone — and you won’t have to break a sweat!

This brilliant idea comes from Erin Jang via Cup of Jo. Erin leans on Trader Joe’s shortcuts — like frozen shredded hash browns, cubed pancetta, and a container of salsa — to make the whole process of feeding a satisfying breakfast to a crowd so much easier.

You simply crisp up the hash browns and then top them with cheesy scrambled eggs, salty pancetta, and fresh pico de gallo. Garnish with avocado and scallion and you’re done!

Set this on the table with some coffee and OJ and you’ve got one seriously delicious breakfast. As long as you keep hash browns in the freezer and pancetta, eggs, cheese, and salsa in the fridge, you can whip up this meal at a moment’s notice — even on a busy Tuesday morning for your family.
