This Spring Salad Would Win in an Office Lunch-Off

This is not a wimpy salad. This is the salad you can bring to work and feel great about. While everyone else is ordering food for lunch, or hitting the vending machine for the second time that day, you can pull out this salad and know it would win in arm wrestling match. Let me tell you why.

This bowl is full of legumes and greens – chickpeas, English peas, fava beans, arugula, and a dill-tahini dressing. And as if this salad couldn’t be more texturally interesting, it’s tossed in ground bread crumbs to make it even more intriguing.

Now that’s my kind of crouton.
