This Smoothie Is Packed with Veggies (but Tastes Like Chocolate)

If you’re trying to up your veggie intake, a great way to do so is to squeeze in a few at breakfast. That way you’re starting your day on a vegetable-filled note! Smoothies are the perfect vessels for this, as they can be super filling (if you’re smart about what you add!) and mask the flavor of things like spinach and, in this case, sweet potato and cauliflower.

Yes, sweet potato and cauliflower! The author suggests steaming them first and then freezing them (for better digestion), which you could totally do on a meal prep session on Sunday. If you don’t feel like taking that extra step, she also notes that you can just use frozen, uncooked veggies.

When you’re ready for breakfast, simply mix milk (this recipe calls for almond milk, but use your favorite), water, frozen cauliflower, frozen sweet potato, avocado, vanilla or chocolate protein powder, baby spinach, pitted dates, raw cacao powder (swap in regular cocoa powder if that’s what you have!), and nut butter (in this case it’s cashew butter) in a high-speed blender. To serve, you can garnish with your favorite toppings, but the author suggests a sprinkle of shredded coconut and a dusting of cacao powder.

And just like that, you’ve managed to pack three vegetables into your first meal of the day, along with healthy fats and protein. Now you’re ready to take on the day!
