When you think of chowder, your mind probably lands on the clam variety. But now that summer is officially here, with fresh corn soon to be in abundance, it’s time to welcome a new chowder into your life. This chicken-corn chowder is just the ticket — and you don’t even have to go near the stove to make it.

It really doesn’t get any easier than a slow-cooker soup. Simply dump all the ingredients into the slow cooker and then let everything cook for either two hours on high or six hours on low.

It’s really about 10 minutes of hands-on time up front, and then you can kick back and relax while a creamy, flavorful corn chowder practically cooks itself. If that’s not summer simplicity at it’s finest, I don’t know what is.
