This Sheet Pan Saffron Chicken Is Easy Yet Impressive
The dump-and-go ease of a sheet pan meal comes in handy on hectic weeknights, but that doesn’t mean you can’t turn to this trusty cooking method on a weekend — especially when you’re entertaining and want to impress your guests. This saffron chicken with plums is proof.
This recipe is simple yet bursting with flavor. You first rub a homemade spice paste — made with saffron, cumin seed, red pepper flakes, fresh garlic, lemon zest, sea salt, and olive oil — all over chicken thighs and legs and let everything marinate for at least a couple hours in the fridge. While the chicken is marinating, you can prep the plums and their sauce — a mixture of shallots, lemon, olive oil, fresh ginger, honey, allspice, and sea salt.
