The actual process of making the mojo is simple: Crush garlic cloves with salt and oregano, then mix it with olive oil and fresh lime and orange juice. Once the chicken is sufficiently marinated in the mojo, all you have to do is throw it on a sheet pan with green olives and onion, orange, and lime slices — and let the oven do the rest!
