There’s nothing like a grilled cheese to make you feel comforted and cozy. One bite of a buttery, crispy grilled cheese and you’re instantly transported to childhood. And while a plain ol’ grilled cheese always hits the spot, it doesn’t hurt to dress it up a little with some in-season produce. Case in point? This roasted asparagus version.

Because this sandwich only calls for five ingredients (not counting olive oil, salt, and pepper), this is the time to choose the best-quality ingredients you can find so they really shine.

By now you’ve probably started to see fresh asparagus at your local grocery store or farmers market. Pick up a bunch — you’ll need six spears for two sandwiches — and roast it for a delicious grilled cheese filling.

This recipe also calls for two types of cheese: white cheddar and Gruyère. Gruyère is a creamy Swiss cheese that melts beautifully — perfect for grilled cheese! The combination of the two cheeses makes for a complex and well-balanced final sandwich.

Head to your favorite bakery and grab a loaf of crusty sourdough, and splurge on some grass-fed butter to swipe on the outside of each slice of bread before grilling it on the stovetop.

If you’re a dunker, make sure to whip up your favorite soup to serve alongside the grilled cheese. Otherwise, just dive in and enjoy that melty, cheesy goodness on its own.
