Over the next few months, you’re going to want a comforting recipe you can depend on; one that’s hearty, healthy, and flavorful. This vegan, gluten-free pumpkin curry — with peanuts, peas, and spiced tofu — definitely fits the bill.

This curry has it all — pumpkin purée; coconut milk; veggies, like carrots, fennel, peas, and zucchini; and crispy tofu. The fragrant spices add warmth and depth of flavor to the dish.

Serve over rice or quinoa, and garnish with peanuts and fresh basil. Your vegan and gluten-free friends will be very happy. (And your meat- and gluten-eating friends will be surprisingly pleased!)
