This One-Pot Ranch Chicken & Rice Is a Weeknight Win

Chicken with a side of rice and sautéed spinach sounds like a nice dinner, doesn’t it? But cooking all of those elements separately can be a lot to juggle after a long day at work. Enter: this ranch one-pan chicken and rice. The whole is definitely more than the sum of its parts here!

The recipe starts with the author’s homemade buttermilk ranch dressing, but if you’d rather use your favorite store-bought kind, go for it! (We also have a DIY ranch recipe on the site that’s super easy to whip up.)

You coat the chicken thighs in the ranch before pan-frying them on each side. Then you sauté onion and garlic in the same pan, pour in some chicken broth and arborio rice, and add the chicken back into the pan. Everything simmers together until cooked, and then you fold in some baby spinach right before serving.

You’ve got juicy chicken, tender rice, and a subtle ranch flavor throughout every bite. It’s basically like a creamy risotto — without all the stirring!
