Hello, weeknight warrior! This recipe is for you. With only five minutes of prep time and 20 minutes of cook time, this buttery, garlicky, herby chicken and zucchini dish comes together in one pan.

Right now gardens and farmers markets are overflowing with zucchini, and this is the perfect recipe to put it to use. You start by melting butter in a large pan and then add in fresh garlic, oregano, rosemary, and thyme. Then cook your chicken breast in the herb butter, set it aside, and add the zucchini to the pan. Once you’ve sautéed the zucchini you add the chicken back in for a minute or two, and then you’re set!

You can bring the pan right to the table when you’re ready to serve. This chicken tastes great on its own or paired with a side salad, quinoa, pasta, or rice. Although the recipe doesn’t call for it, a squeeze of lemon juice and a sprinkle of Parmesan over everything would definitely be welcome here too.

And the best part? With only one pan in the mix, cleanup will be a breeze!
