This One-Pan Cheesy Chicken and Rice Is Calling Your Name
Looking for something comforting that won’t weigh you down? This cheesy chicken casserole, with mushrooms, apple, spinach, and wild rice, is just the thing. It’s perfect for these chilly fall nights and, best of all, it cooks up in one pan.
This one-skillet meal truly has all the bases covered — protein, starch, veggies, even fruit! It’s so flavorful and filling that you don’t need to supplement it with any sides. Unless, of course, you want to whip up a quick green salad to go with it.
First you sauté onion, garlic, mushrooms, apples, and thyme until soft and caramelized. Then you pour in some chicken broth and white wine, stir in the rice and chicken breast, and simmer for half an hour or so. Toss in some spinach, sprinkle on some cheese, and put the whole skillet under the broiler until everything is bubbling and golden-brown.
