Remember the good ol’ days, when the only thing to do in your small town was go hang out at the mall? You’d meet your friends, shop a little, and then invariably end up in the food court. And while a slice from Sbarro was tempting, you always ended up with a plate piled high with chicken teriyaki and steamed white rice.

Get ready for some serious nostalgia, folks, because this recipe perfectly captures that ubiquitous mall meal.

You only need nine ingredients — boneless, skinless chicken thighs; mirin, a Japanese sweet rice wine; soy sauce; brown sugar; grated ginger; sesame oil; cornstarch; and oil — and a little over two hours (for marinating) to make this flavorful dish.

Serve it over white rice and let all the (awkward) memories of your adolescence flood over you.
