Budget-friendly chicken thighs — cooked simply in some olive oil with salt and pepper — consistently deliver juicy, flavorful results. But sometimes you want to punch things up a little, even if it's a weeknight and you don't have much time to spare or energy to expend. Enter: this sticky-sweet lemon-turmeric glazed chicken with honey, black pepper, and curry powder.
The beauty of this chicken is that it comes together in one large pot or Dutch oven in under an hour. First you brown the thighs, and then you pour the glaze (a mixture of honey, lemon juice, pepper, turmeric, and curry powder) over the chicken and put the whole pot into the oven to bake for about 30 minutes.
I should note that this isn't a completely set-it-and-forget-it meal, as you do have to baste the chicken with the glaze every 10 minutes. But in those 10-minute increments you can prep a simple green salad and set the table.
Once the chicken is done, bring the pot right to the table and serve alongside those greens. Don't forget some slices of crusty bread to sop up all that delicious sauce!
