This Is What You Should Do with All Those Ramps Right Now
Ramp season comes and goes so quickly, it’s hard to take advantage of this seasonal gem. Where do you start? I usually go the standard route and add the green ribbons to pasta, but this year I want to do something interesting. Please welcome to the stage: ramp kimchi.
The recipe for ramp kimchi is similar to The Kitchn’s recipe for standard kimchi. Essentially you are just getting rid of the scallions and adding a pound (yes, a pound!) of ramps to the recipe. All the other flavors are there.
