Ramp season comes and goes so quickly, it's hard to take advantage of this seasonal gem. Where do you start? I usually go the standard route and add the green ribbons to pasta, but this year I want to do something interesting. Please welcome to the stage: ramp kimchi.
The recipe for ramp kimchi is similar to The Kitchn's recipe for standard kimchi. Essentially you are just getting rid of the scallions and adding a pound (yes, a pound!) of ramps to the recipe. All the other flavors are there.
