To get perfect zoodles, you can cut the entire zucchini into thin strips resembling noodles using a mandoline or spiralizer, or you can often buy them pre-cut at grocery stores. Once you have your zoodles, prep the sauce by sautéing red pepper flakes and garlic in olive oil. Add shelled, deveined shrimp and cook until pink, then remove the shrimp. Deglaze the pan with some lemon juice, cook the zoodles in the spicy, lemony sauce, and then add the shrimp to serve. All this really needs is a crisp glass of white wine to make it the perfect summer meal.
