Today is National Crunchy Taco Day! (Yes, that’s a thing.) What better way to celebrate than with a big batch of spicy chicken tacos? Becky Hardin, the blogger behind The Cookie Rookie, has an ingenious way of making a big batch all at once.

Bake them all together in a 9×13-inch baking dish! All you have to do is grease the dish, place the crunchy taco shells in the dish (standing up), spoon the filling into the shells (which, in this case, is refried beans and a spicy shredded chicken with tomatoes and green chiles), top with shredded cheese, and bake.

Once the tacos come out of the oven, you can bring the baking dish right to the table and let everyone grab their own and add their preferred toppings. Salsa, sour cream, pickled jalapeños, and guacamole are all great options.
