If you’re tasked with putting together a smaller Thanksgiving feast this year — like, say, for Friendsgiving — it’s totally possible to do it all on two sheet pans. Yes, I said two sheet pans! Here’s how.

This ingenious sheet pan Thanksgiving feast from Chelsea’s Messy Apron includes turkey, sweet potatoes, dressing, and roasted Brussels sprouts. It makes four to six servings, which is perfect for a small crowd. If you have friends or family coming, ask them to bring the rolls, cranberry sauce, and a dessert. Then you’ll really have a full spread!

Chelsea goes into very specific detail for how to make this all work, but one of the smart things she does is use bone-in, skin-on turkey breast. Working with just turkey breast is much easier than a whole turkey, but you still get that crispy skin and juicy meat. She notes the turkey breast she buys comes with a gravy packet, but you can also totally make your own.

On one sheet pan you’ll roast the turkey and dressing; on the other you’ll roast the Parmesan Brussels sprouts and the candied sweet potatoes. You’ll need one hour for prep work and one hour for cook time, which means in two hours you can have a whole Thanksgiving meal ready!
