The past month has been brutal weather-wise, and it doesn't appear that mother nature is letting up anytime soon. I'm craving rich flavors of long-simmered soups and stews with very little hands-on time, as my schedule is crammed with new year obligations. It's a bonus if you can find a brothy concoction that replicates a family classic comfort food. This soup is exactly that!
Is there really anything better than a warm cream sauce over noodles? I mean, sure, there's photos of cats wearing wigs, but honestly, that's the only thing that can compete with the satisfaction that a beef stroganoff dish brings to mind.
This dish in particular is a little more hands-off than the traditional method. It can be made in the Instant Pot or slow cooker while you're off doing other things of more importance. Because this traditional meal has been turned into a soup, it lightens things up a bit so it has the same flavor punch, thickness, and feel without the weight that comes with a thick, cream-based noodle dish.
The meat, broth, and seasonings do their thing for a bit in whichever cooking method you favor and then the sour cream, noodles, and cornstarch are added in at the end to bring it all together. This dish is sure to hit the spot on these unbelievably chilly nights.
You can, of course, add the noodles into the dish at the start instead of end, but make sure to add extra cooking liquid to help make up for it and don't forget to set a timer so they don't end up soggy.
