This Grilled Cheese Has a Spicy, Fermented Secret

Filled with plenty of cheese and pan-fried in butter (or mayo!), grilled cheese sandwiches are notoriously decadent. If you want to cut through the richness with something a little spicy and a little funky, you’re going to love this recipe for a kimchi grilled cheese — or grilled kimcheese, if you will.

This recipe calls for mixing softened butter with grated Parmesan and spreading it on one side of each slice of bread. Once you put the first piece of bread in a hot skillet (buttered-side down), you top it with the filling — a mixture of chopped kimchi and grated cheddar and Monterey Jack — and then sprinkle on a little fresh mint before adding the second slice of bread (buttered-side up).

When both sides of the sandwich are sufficiently toasted and the cheesy filling is all melted, your grilled kimcheese is complete.
