If you love chicken cacciatore but don’t love having to watch it simmer on the stove, this recipe is for you. You can prep all the ingredients, add them to the slow cooker, go about your day, and come back to a delicious meal. And with garlic, onion, bell pepper, carrot mushroom, tomatoes, kale, olives, and herbs, this slow cooker chicken cacciatore is as hearty and flavorful as the stovetop version.

If you want this to truly be a dump-and-go affair, then you can just add your chicken right into the slow cooker. But if you have a few extra minutes to spare and don’t mind dirtying another pan, the author suggests searing the chicken in a pan first to get a nice golden-brown crust on the outside that you won’t get in the slow cooker alone.

After three to four hours on high or six to seven hours on low, you’ll be rewarded with tender, juicy chicken in a rich tomato sauce. Serve it over pasta or rice with a sprinkle of Parmesan on top (and a glass of wine!) and you’ve got a comforting dinner to carry you through the fall.
