After spending the last few days (or weeks, possibly a month) eating holiday food loaded with calories and all the extra-decadent things that make that time of year so special, it's always nice to find a dish that is still full of color and helps cut down on the hours spent on the treadmill. This breakfast casserole is exactly that — it's full of freshness with a flaky crust and fit to feed a family!
When it comes to the mornings in January, we often still have family visiting or a laundry list of things to take care of (if only the Christmas ornaments packed themselves). Breakfast or brunch isn't usually high on our to-do list and it's easy to fall into a rut of just grabbing coffee on the way out the door. This recipe is a perfect solution to cure the "I'll just grab something at the office" blues!
This recipe is a great reminder that food that's lighter in nature can still be wrapped in a bit of pastry. I mean, we don't want to give up all the decadence, right?
To make the recipe you simply roll out crescent roll dough, sprinkle it with cheese and assorted vegetables, and then pour over some egg whites and a little seasoning and pop her in the oven for 20 minutes while you're getting ready.
The result is a tasty treat that will feed a family, the office, the sleepover gang, your in-laws that just don't seem to ever leave, or yourself for a week if you only like cooking once!
