This Cucumber Noodle, Watermelon, and Feta Salad Is the Most Refreshing Thing You’ll Eat This Summer

I’ve seen watermelon-mint-feta salads on plenty of restaurant menus and cooking sites (ahem, like ours) before, but this recipe, with one smart twist, stopped me in my tracks. Thanks to the addition of cucumber “noodles,” it just might be the most refreshing salad you’ll eat this summer.

The easiest way to make the cucumber noodles would be to use a spiralizer, but if you don’t have one (I don’t), a julienne peeler gets the job done just fine.

Mix the cucumber strands with cubes of feta and watermelon, toss in some ribbons of mint, and squeeze some fresh lime juice over everything. The author also suggests adding some chopped red onion, which sounds absolutely delicious.

The next time it’s too hot to cook, whip up this salad — you won’t be sorry.
