Any 4th of July spread needs a good slaw. This year, we’re trying something a little lighter and brighter than the traditional mayo-based version. This recipe features a whole host of crunchy vegetables and a tangy citrus-miso dressing. Amid a sea of brats and buns, this slaw provides a welcome pop of color.

You can use whatever vegetables you like here, but the author went with ribboned asparagus spears, lacinato kale, carrots, celery, golden beets, fennel, red cabbage, green onions, and radishes.

You can make the dressing — a mixture of orange juice, lime juice, garlic, miso, tamari, Dijon, olive oil, and black pepper — ahead of time, so all you have to do is toss it with the slaw ingredients right before serving. Don’t forget to garnish with cilantro leaves and toasted pumpkin seeds!
