When Cinco de Mayo and National Enchilada Day join forces, delicious things happen. Even if you’re not celebrating either holiday, this enchilada dip — packed with green chiles, chicken, and cheese — will be the most popular dish on the table at your next party.

Making enchiladas isn’t hard, per se, but they do require a bit of legwork (sometimes you just don’t want to fill and roll all those tortillas!). They aren’t the most party-friendly food, either — you have to provide plates, forks, and knives to everyone eating them.

But with this dip, you get all the flavors of enchiladas and none of the fuss. Toss all the ingredients together in a large bowl, pour the mixture into a baking dish, top with cheese, and bake until hot and bubbly. Then all you need is a bag of tortilla chips and you’re set to serve this crowd-pleasing appetizer to party guests.

Seriously — I guarantee this dip will be gone faster than you can say “Happy Cinco de Mayo!”
