On busy weeknights when the family comes home and you only have a short while between basketball practice or your evening grad school class, you want comfort and you want it in a hurry. That said, you also want a meal that everyone will eat without complaining because sometimes life is more simple with less whining.

The classic combo of broccoli and cheese is a good one, and this creamy broccoli mac and cheese comes together in less than 30 minutes so you can get on with life — and by life, I mean dishes.

Macaroni and cheese is a pantry and household staple for many folks. We all tend to put our own twists on this classic dish, but one way to help get a few more greens on the table is with the addition of broccoli.

First get your noodles boiling. While that’s happening, sauté shallot and garlic with butter, then add flour to form a roux. Whisk in some milk, mustard, and seasoning, and finally add the cooked pasta, broccoli, and cheese.

Since the broccoli only simmers in the sauce for about four minutes, it maintains a nice firm texture with a bit of crunch. If you like your broccoli a little softer, try adding it to the colander while you drain the noodles, giving it a head-start on the steaming process!
