I'm always impressed by Larabars. With only a few ingredients, the bars manage to magically taste like the flavor printed on the wrapper. Case in point? The blueberry muffin bars. Somehow dates, cashews, blueberries, lemon, and vanilla combine to taste like a blueberry muffin — and that's the same principle behind this smoothie.
Blend some dates, vanilla extract, cashew butter, blueberries, almond milk, and a banana together and voila! You have a thick, creamy smoothie with a flavor reminiscent of a blueberry muffin.
While there's nothing like a warm blueberry muffin straight out of the oven, on a day when you're looking for something a little lighter (perhaps pre-workout?) this smoothie should definitely do the trick.
