Technically the first day of autumn isn’t until September 22, but if you’re already plotting apple-picking trips and pulling your coziest sweaters out of storage, you’ll also want to bookmark this fettuccine with pumpkin Alfredo sauce immediately. With only five ingredients, it’s the quick comfort-food recipe you’ll turn to again and again all season long.

This recipe really is perfect for busy weeknights. First get your water boiling and drop your fettuccine in. While that’s going on, melt some butter in a skillet, sauté some garlic in it, add in the canned pumpkin purée (not pumpkin pie filling!) and heavy cream, and simmer for a bit. Then you just stir in some Parmesan for a little extra salty, cheesy goodness before dropping the cooked pasta right in after draining. Mix it all together and you’ve got the dreamiest, creamiest pumpkin Alfredo for dinner.

While this pasta is divine on its own, the author also suggests topping it with pan-fried chicken, spicy sausage, or garlic-sautéed spinach. You really can’t go wrong here — I promise.
