This refreshing sparkler is the nudge you've been needing to add that pineapple to your shopping cart. Muddled in the bottom of your glass, the tropical sweetness of the fruit is highlighted with the pop of lime simple syrup, and balanced with the spice and sparkle of ginger beer.

Start by Making Simple Syrup (If You Want to)

Simple syrup is nothing more than granulated or fine sugar dissolved in water, and it couldn't be easier to make. It's a go-to sweetener for drinks because it blends so well with other liquids. It's typically made with a one-to-one ratio of sugar to water, and can easily be infused with aromatics and herbs. Stored in a sealed container, simple syrup will last about two weeks in the refrigerator.

Make the lime syrup: To make the lime syrup, add about a tablespoon of fresh lime juice (per one cup of sugar) to the simmering water. Remove the pan from the heat and cool completely before straining the syrup into a jar. The lime simple syrup can be made up to two weeks in advance.

How to Mix this Drink

For each drink, gently muddle about 1/4 cup chopped pineapple in the bottom of a tall glass. Add ice and pour in a couple spoonfuls of lime simple syrup (or Rose's sweetened lime juice), to taste. Top with ginger beer, and stir together.
