These Potato Skin Egg Boats Will Make You a Breakfast Hero

Want to be a breakfast hero this weekend? Make these egg boats. This recipe has all your favorites — bacon, egg, and cheese — served in a convenient edible potato boat. Serve them with mimosas and Bloody Marys and you'll definitely win brunch.

The best part about this recipe is that you can actually get a head start on prep if you need to. Simply bake the potatoes ahead of time for about 45 minutes, let them cool, and then store them in the fridge until you're ready to stuff them.

To fill the potatoes you'll need to slice them in half lengthwise and scoop out the flesh with a spoon. You don't actually use this part in these egg boats, so be sure to set them aside for another use, like these cheesy mashed potato puffs.

Then you just whisk eggs with milk, bacon, cheddar, scallions, salt, and pepper and pour the mixture into the potato skins before topping with more cheese. Bake the potatoes until the eggs set and then serve!
