Because you can make these mini frittatas in advance, they’re perfect for busy mornings when all you have time for is grabbing a granola bar or scarfing down a bowl of cereal before you run out the door. Unlike a granola bar or bowl of cereal, these muffins are packed with protein from the eggs, turkey, and cheese, so they’ll keep you full and energized until lunchtime. They also have broccoli, which means you can pat yourself on the back for eating something green before noon.

The recipe makes 12 muffins, which, after you let cool completely, you can pack up in an airtight container and stash in the fridge to eat all week long. They’re also super customizable! Don’t like turkey? Swap in deli ham. Prefer a different cheese? Swap in Gouda for the cheddar. The possibilities are endless!
