When it’s too hot to turn on the oven, baked goods are out of the question. But that doesn’t mean you can’t satisfy your brownie craving! These no-bake brownies are rich and fudgy — and there’s not an ounce of flour or drop of butter in sight.

You only need seven ingredients to make these brownies: pitted dates, hulled hemp seeds, walnuts, unsweetened cocoa powder, salt, vanilla extract, and water. All you have to do is blend them together in a food processor until a sticky “batter” forms, and then press the mixture into a parchment-lined pan.

Next comes the chocolate ganache topping, which you make by whisking maple syrup, unsweetened cocoa powder, vanilla extract, and melted coconut oil together. After you pour the ganache over the brownie base, you stick the whole baking pan in the freezer for at least two hours to let it set.

Then it’s time to slice! While these won’t taste like the traditional baked brownies you know and love, they’re a worthy substitute for these steamy summer days.
