These Cucumber-Mint Popsicles Are Like a Spa for Your Tastebuds

I’ve only been to a spa once in my life, but — besides the relaxing massage, of course — my favorite part was the cold cucumber-mint water set out for guests to enjoy.

With fresh mint, cucumber, and green tea, these Popsicles are reminiscent of that refreshing spa water — and they’ll be stocked in my freezer all summer long.

First you’ll need to make a mint-infused simple syrup, with water, sugar, and sprigs of fresh mint. The author notes that this will yield more than you need for your Popsicles, but you can always store it in the fridge and use it for cocktails (mojitos come to mind).

Then all you have to do is blend the simple syrup with unsweetened green tea, fresh lime juice, and peeled cucumber until smooth; pour the mixture into Popsicle molds; and wait four or five hours until the ice pops are completely frozen.
